Michelin-Trained Chef’s Cuisine Comes Coastal

Nicholas Jowett-Moore is a Michelin-trained international chef who, having recently relocated to Moreton Bay, is now offering bespoke cooking classes and catering to local residences and establishments.  

The name of his business, Koha Cuisine, not only seems to invoke the tight-knit coastal ambience of our region but also is a strong nod to Nick’s origins in New Zealand, with ‘A Koha’ translating to ‘a gift’ or ‘to be gifted’ in Māori.  

“I’m really proud of my New Zealand roots and wanted to emphasise them with a unique and interesting business name rather than something generic,” Nick said.  

According to Nick, he loves to impart the gift of delicious food while catering at events and hosting private classes (guiding the preparation of dishes such as pasta, dumplings, rice paper rolls and sushi, typically to a group of six to 20 people over two hours).  

“I think my biggest takeaway from all of the years is that the whole point of being a chef is not simply to cook – it’s to make people happy with food,” Nick said.

Bringing Fine Dining Home to Moreton Bay

With Nick having worked in almost every facet of the hospitality industry – from bars and cafes to molecular fine dining and hatted and Michelin-starred restaurants – he inevitably focused on his vision to create his own enterprise.  

He said that people are now able to come to him with their likes and dislikes, their themes or ideas, in order to “create a menu and experience that is designed to blow them and their guests away”. 

“We can create a literal restaurant experience in the comfort of your own home or apartment building, taking care of everything from ordering ingredients to supplying cutlery, plates and glassware and cleaning everything up after it’s finished,” Nick said.  

He said the idea behind his business was to bring people together with support from the community being fundamental, expressing his appreciation to local suppliers and producers King Street Meat Co, Morgan’s Seafood and Big Michael’s Fruit and Vegetables.
