A new dining experience has arrived on the Redcliffe waterfront, with Fattoush Bayside bringing globally influenced cuisine centred around charcoal cooking to the peninsula.
Led by executive chef and restaurant manager, Alan Levanza, the restaurant draws inspiration from the communal style of meals he experienced growing up in western Sydney.
“The menu has been inspired by childhood memories of Sunday lunches, growing up in a multicultural hotspot of western Sydney,” Alan said. “We were always at friends’ houses for Sunday lunch, from all nationalities and all walks of life. From Italian, to Greek, South American, and Lebanese, whilst the food options may have differed, the one common denominator was charcoal and size.”
Alan said those experiences helped shape a menu focused on generous platters, fresh salads and charcoal-cooked meats designed to be shared at the table.
Charcoal, Salads, and Local Brews: A Unique Peninsula Experience
The restaurant aims to create a relaxed, homestyle dining experience where guests can gather with family and friends over simple but flavourful food.
Alan said that while the charcoal meats are a highlight, the restaurant’s salads are another standout feature.
“For me, I guess our range of salads is what we are truly proud of,” he said. “Our charcoal skewers are to die for, using marinades that have been used for generations, but something out of left field would be our lentil and walnut, or chickpea salads. It’s not something that the normal person would try, but they are living proof that great healthy food can also taste awesome.”
Alan said the restaurant’s share-style philosophy and charcoal cooking help set Fattoush Bayside apart from other venues on the peninsula.
“There are a lot of great restaurants in our area,” he said. “I think our uniqueness lies in our charcoal-infused meats and family-style portions, our share platter philosophy and we also have an exceptional beer range from a local award-winning brewery, Hip Hops Brewers.”
Alan said the team hoped locals would embrace the concept and enjoy the experience for themselves.
“All I can say is the proof is in the pudding, or charcoal in this case,” he said. “So come and give us a try I am sure you will not be disappointed.”
